An Asian food expert, Isaac Toups has expressed his willingness to continue to experiment with the Nigerian spices he was introduced to at the just-concluded GTCO Food and Drinks Festival 2023. The 3-day event held at the massive GTCentre, Lekki, Lagos.

Isaac Toups who spoke at the masterclass on ‘Cajun Cooking’ told Trek Africa Newspaper after the session, ‘The take away from my masterclass are the basics of Asian food from Nova Scotia to South Louisiana mixed with other locals like the Creoles, native Americans, Mexicans, and others.’

‘I started cooking professionally at 20. I taught myself how to cook, instead of spending money on toys and frivolous things, I spent on cookbooks and classes. If you are just coming to cooking, find a restaurant that cooks from scratch, learn everything, pay attention and work hard. I will advise that you should be experimental with your food, learn to cook your own food to your taste, try new things. Try different cuisines, sometimes it is good, sometimes it is bad but you are learning something new’, he advised.

Toups added: ‘This is my first time in Africa and I am having a dynamite time. The spice level of food here is equivalent to Asian foods. The spices here are incredible. I will like to try then when I get back home.’

With the GTCO Food and Drink Festival, the GTCO Enterprise has combined its banking and commerce focus with the arts, culture, entertainment, and tourism capacity of Nigeria. The financial institution has also been able to place the city of Lagos in front of the whole world as Nigeria’s home of culture and tourism, the nation’s commercial nerve centre, and West Africa’s economic hub.
